Easy, Protein-Packed Chicken Muffins

Ingredients

  • Moy Park Chicken Mini Fillets 500g
  • Feta 125g
  • Fresh Parsley (few leaves)
  • Sun Dried Tomato Pesto (4 heaped tsps)
  • Chopped Roast Peppers 75g
  • 1 egg white
  • 2/3 pinches of salt
  • Chilli Jam as desired (or another jam/topping of choice)

Method

  1. Take mini fillets and blend with the egg white in food processor.
  2. Mix the rest of the ingredients together with the chicken mix.
  3. Spray moulds and fill the muffin trays with the chicken mixture.
  4. Cook at 200oc for 15-20mins.
  5. Once of of oven glaze with tsp of chili jam on each.
