Chicken Sriracha Lettuce Wraps

Ingredients

  • 2 Packs of Moy Park Chicken Chunky Breast Pieces
  • 1 pump of spray lite
  • 1 pack of little gem lettuce (wash and separate)
  • 100g frozen onions or 1 small onion (diced)
  • 1 pack of shitake mushroom (sliced)
  • 1 tin of water chestnuts
  • 25 mls soy sauce
  • 50ml Sriracha sauce
  • 1 lime (Juice only)
  • 75g mayonnaise
  • Handful of fresh parsley.

Method

  1. Fry onions in pan with oil until soft, then add mushrooms until reduced slightly and then add water chestnuts.
  2. Add soy and Sriracha sauce and stir, simmer for a few minutes and finally add chicken and mix together. Cook for a few more minutes.
  3. Mix mayonnaise and lime juice together
  4. Place lettuce cups on a serving tray and add a spoonful of the Chicken mixture, drizzle with mayo dressing and finish with a flurry of parsley
