Remove all packaging. Place in a roasting tray and cover loosely with foil. Cook in the centre of a preheated oven at 190°C/fan 170°C/gas mark 5 for 45 minutes per Kg plus 20 minutes.
Remove foil for last 30 minutes of cooking time.
Poultry is cooked if the juices run clear when the deepest part of the flesh is pierced with a thin skewer. If the juices are pink, continue cooking for a few minutes and retest.
For a succulent and flavoursome roast, stuff the chicken with lemon and thyme before cooking. Serve with all the trimmings and golden roasted potatoes for that special weekend treat.
