Grilled chicken and peach salad

We're in love with this Grilled Chicken and Peach Salad, an easy side salad blooming with juicy freshness. Flame-grilled Chicken served with sweetly grilled peaches, crumbly feta, refreshing rocket and mint salad with zesty honey, lemon and chilli dressing.

Ingredients

  • 1 pack of Moy Park Flamegrilled Chicken Chunky Breast Pieces
  • 2 peaches cut in quarters
  • 1 roasted red pepper sliced (shop bought in jars)
  • 70g crumbled feta
  • 50g rocket leaves
  • 6 mint leaves
  • ½ sliced fresh chilli
  • Dressing
  • Juice of ½ large lemon
  • 2 tsp honey
  • ½ tsp chilli flakes

Method

  1. Place a griddle pan on a medium to high heat
  2. Add the peaches and cook for 2 minutes each side
  3. Turn pan off and add sliced chicken into the pan to gently warm
  4. To make dressing mix the lemon juice, honey and chilli flakes together in a bowl
  5. Place rocket on a plate, add the peaches, chicken and some dressing and toss lightly
  6. Add crumbled feta, sliced chillies and peppers
  7. Finish with more dressing and torn mint leave
