Ingredients
- 1 pack of Moy Park Flamegrilled Chicken Chunky Breast Pieces
- 2 peaches cut in quarters
- 1 roasted red pepper sliced (shop bought in jars)
- 70g crumbled feta
- 50g rocket leaves
- 6 mint leaves
- ½ sliced fresh chilli
- Dressing
- Juice of ½ large lemon
- 2 tsp honey
- ½ tsp chilli flakes
Method
- Place a griddle pan on a medium to high heat
- Add the peaches and cook for 2 minutes each side
- Turn pan off and add sliced chicken into the pan to gently warm
- To make dressing mix the lemon juice, honey and chilli flakes together in a bowl
- Place rocket on a plate, add the peaches, chicken and some dressing and toss lightly
- Add crumbled feta, sliced chillies and peppers
- Finish with more dressing and torn mint leave
