Rebecca’s Honey Chilli Chicken Chunks with Sesame Noodles

Ingredients

For the Sweet Sauce:

  • 1 tbsp sriracha sauce
  • 1 tbsp tomato ketchup
  • 1 tbsp clear honey
  • Squeeze fresh lime juice
  • 1 teaspoon sesame oil
  • 2 cloves garlic finely chopped
  • 1 small piece root ginger peeled and finely chopped

For the Noodles:

  • 1-2 pack straight to wok noodles
  • 1 tablespoon sesame oil
  • ½ small onion
  • ½ medium red bell pepper
  • ½ medium green bell pepper
  • 1 small carrot thinly sliced
  • 1 tablespoon light soy sauce

Method

  1. Cook the Moy Park chicken chunks in the air fryer as per packet instructions.
  2. For the noodles, place a wok on a medium to high heat and add the oil. Add in the onions, red peppers and green peppers then cook for 2 minutes. Add in the carrots then toss in the cooked noodles and stir fry for 1 minute. Pour in the soy sauce and mix until combined.
  3. For the sauce, add the sriracha sauce, tomato ketchup, honey and lime to a small bowl, then stir and set aside. Place a frying pan on a medium heat and add the sesame oil. Add in the chopped garlic and ginger. Cook for 2 minutes whilst stirring. Pour the sauce into the pan, stir and allow to simmer for 1 minute. Add the cooked chicken to the sauce and coat the chicken in the sauce.
  4. Plate up, garnish with spring onion and sesame seeds and enjoy!
